Vegan Jackfruit Tacos with Mexican Twist
Ingredients
- 1 can jackfruit, drained and rinsed (or 1 bag frozen, thawed)
- 1 tbsp smoked paprika
- 2 tsp cumin
- 2 cloves garlic, sliced
- 1 sweet onion, thinly sliced
- 1 lime
- 1/2 orange
- Tortillas, for serving
- Fresh cilantro, for serving
Preparation
Combine the jackfruit with the spices and garlic. Let sit for at least 1 hour (or overnight) in the fridge.
In a large saute pan, saute the onion over high heat until brown around the edges, 7-8 minutes.
Add the spiced jackfruit, with all of the spices and garlic. Add 1/2 cup water. Cook until aromatic and sauce thickens, 7-8 minutes.
Squeeze in the juice of the lime and 1/2 orange. Cook 1 more minute.
Taste and season with salt and pepper.
Serve in tortillas, garnish with cilantro.
