Vegan Jackfruit Tacos with Mexican Twist

Ingredients

  • 1 can jackfruit, drained and rinsed (or 1 bag frozen, thawed)
  • 1 tbsp smoked paprika
  • 2 tsp cumin
  • 2 cloves garlic, sliced
  • 1 sweet onion, thinly sliced
  • 1 lime
  • 1/2 orange
  • Tortillas, for serving
  • Fresh cilantro, for serving

Preparation

  1. Combine the jackfruit with the spices and garlic. Let sit for at least 1 hour (or overnight) in the fridge.

  2. In a large saute pan, saute the onion over high heat until brown around the edges, 7-8 minutes.

  3. Add the spiced jackfruit, with all of the spices and garlic. Add 1/2 cup water. Cook until aromatic and sauce thickens, 7-8 minutes.

  4. Squeeze in the juice of the lime and 1/2 orange. Cook 1 more minute.

  5. Taste and season with salt and pepper.

  6. Serve in tortillas, garnish with cilantro.
