Vegan Jackfruit Tacos with Spices

Ingredients

  • 2 cups of young jackfruit
  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small corn tortillas
  • 1/2 cup of chopped cilantro
  • Lime wedges for serving

Preparation

  1. Heat olive oil in a skillet over medium heat

  2. Add diced onion and minced garlic, sauté until softened

  3. Stir in young jackfruit, chili powder, cumin, smoked paprika, and cayenne pepper

  4. Cook the mixture until the jackfruit is tender and flavors are blended, about 10-15 minutes

  5. Add lime juice, salt, and pepper, stirring to combine

  6. Warm the corn tortillas in a separate pan or microwave

  7. Assemble tacos by filling each tortilla with the jackfruit mixture and topping with chopped cilantro

  8. Serve immediately with lime wedges on the side
