Vegan Lemon and Dill Cucumber Tea Sandwiches

Ingredients

  • for the filling:
  • 1/2 cup vegan mayo (i used @eatjust)
  • 1 tsp dill weed
  • 1/4 tsp garlic powder
  • 1 tsp lemon juice
  • a few cracks of pepper

Preparation

  1. The rest is pretty self explanatory. You’ll need about 8 slices of white bread with the crusts removed - I used @daveskillerbread’s white bread done right. You’ll also need a cucumber (duh) that’s peeled, deseeded, and very thinly sliced

  2. I like to cut each piece of bread into two smaller rectangular slices first, then fill, so that it’s less messy. But you can fill whole sandwiches and then cut them in half after

  3. Spread on a bit of the lemon/dill/mayo mixture, layer some cucumber slices on top, sprinkle a little salt or extra dill if you feel like, and then top with the bread
