Vegan Lemon Dill Cucumber Tea Sandwiches

Ingredients

Filling

  • 1/2 cup vegan mayo
  • 1 tsp dill weed
  • 1/4 tsp garlic powder
  • 1 tsp lemon juice
  • a few cracks of pepper

Sandwich components

  • 8 slices white bread
  • 1 cucumber

Preparation

  1. Mix the vegan mayo, dill weed, garlic powder, lemon juice, and pepper together to create the filling mixture.

  2. Remove the crusts from 8 slices of white bread and cut them into smaller rectangles if desired.

  3. Peel, deseed, and slice the cucumber very thinly.

  4. Spread a bit of the filling mixture on one side of each bread slice.

  5. Layer the cucumber slices on top of the filling.

  6. Sprinkle with a little salt or extra dill if desired.

  7. Top with another bread slice to complete the sandwich.
