Vegan Lemon Dill Cucumber Tea Sandwiches
Ingredients
Filling
- 1/2 cup vegan mayo
- 1 tsp dill weed
- 1/4 tsp garlic powder
- 1 tsp lemon juice
- a few cracks of pepper
Sandwich components
- 8 slices white bread
- 1 cucumber
Preparation
Mix the vegan mayo, dill weed, garlic powder, lemon juice, and pepper together to create the filling mixture.
Remove the crusts from 8 slices of white bread and cut them into smaller rectangles if desired.
Peel, deseed, and slice the cucumber very thinly.
Spread a bit of the filling mixture on one side of each bread slice.
Layer the cucumber slices on top of the filling.
Sprinkle with a little salt or extra dill if desired.
Top with another bread slice to complete the sandwich.
