Vegan Oatmeal Ice Cream

Ingredients

  • 2 cans full fat coconut milk
  • 1 cup rolled oats
  • 1/3 cup maple syrup
  • 1 T ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 T arrowroot powder
  • 2 T grapeseed oil
  • 1 cup raisins

Preparation

  1. Soak the oats with coconut milk, maple syrup and spices overnight in the fridge

  2. Next day, blend all the ingredients until smooth, except for the raisins

  3. Transfer the mixture into your ice cream maker, then the raisins, drained; ??(If you don’t have the ice cream maker that’s fine! Just freeze it as it is and before it gets totally frozen, mix the ice cream with a spoon for a bit and turn back to the freezer); 4. Transfer the ice cream to a airtight container and freeze before serving

  4. Tip: take the ice cream from the freezer 5 to 15 min before scooping
