Vegan Orange Chocolate Cake with Coconut Chocolate Cream Frosting
Ingredients
- Spelt flour (whole grain) - 2 cups
- Baking powder - 2 tsp
- Baking soda - 1/2 tsp
- Olive oil - 1 cup
- Soy milk / almond milk - 1 1/2 cups
- Orange Juice - 1/3 cup or Orange essence - 1 tsp
- Cacao powder - 3 tbsp
- Raw sugar / coconut sugar - 1 cup
Coconut Chocolate Cream Frosting
- Coconut cream - 1 tin
- Vanilla extract - 1 tsp
- Maple syrup - 3 tbsp
- Cacao powder - 2 tbsp
Preparation
Preheat the oven to 350°F (180°C).
In one bowl, sift together the spelt flour, baking powder, and baking soda.
In another bowl, mix together the olive oil, soy milk (or almond milk), orange juice (or orange essence), and raw sugar.
Add the wet mixture to the dry mixture and fold the mixture together. Be careful not to overmix.
Transfer the batter into a baking tin.
Bake the cake for 40 to 45 minutes or until it is completely done.
Once the cake has cooled down, spread the coconut chocolate cream frosting on top.
Decorate the cake with sugar-dipped caramelized orange slices.
