Vegan Potato Croquettes with Rice and Garlic

Ingredients

  • 350 grams of peeled potatoes
  • 2 cups of boiled rice
  • 1 cup wholemeal bread crumbs
  • 1/3 cup almond milk
  • 2 tablespoons of parsley
  • 2 crushed garlic cloves
  • 2 tablespoons of vegan butter
  • 2 teaspoons of salt
  • Pepper
  • Sunflower oil for frying

Preparation

  1. In a salted pot with water add the potatoes and boil until tender.

  2. Once cooked place them in a bowl and mash them.

  3. Add the butter, 2 teaspoons of salt, pepper, milk and combine.

  4. Once combined add the rice, bread crumbs, parsley and garlic.

  5. Shape the croquets and shallow fry.
