Vegan Potato Croquettes with Rice and Garlic
Ingredients
- 350 grams of peeled potatoes
- 2 cups of boiled rice
- 1 cup wholemeal bread crumbs
- 1/3 cup almond milk
- 2 tablespoons of parsley
- 2 crushed garlic cloves
- 2 tablespoons of vegan butter
- 2 teaspoons of salt
- Pepper
- Sunflower oil for frying
Preparation
In a salted pot with water add the potatoes and boil until tender.
Once cooked place them in a bowl and mash them.
Add the butter, 2 teaspoons of salt, pepper, milk and combine.
Once combined add the rice, bread crumbs, parsley and garlic.
Shape the croquets and shallow fry.
