Vegan Potato Salad with Chickpeas and Pickles
Ingredients
- 3 potatoes
- 1/2 can chickpeas
- 4 chopped pickles
- 1/4 cup chopped celery
- 1 tsp dill
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 3 tsp mustard
- 1/2 cup vegan mayo
Preparation
Dice 3 potatoes.
Boil the diced potatoes until tender.
Drain the potatoes.
Add the drained potatoes to a bowl with chickpeas, pickles, celery, dill, salt, pepper, mustard, and vegan mayo.
Mix well.
Serve.
