Vegan Potato Salad with Chickpeas and Pickles

Ingredients

  • 3 potatoes
  • 1/2 can chickpeas
  • 4 chopped pickles
  • 1/4 cup chopped celery
  • 1 tsp dill
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 3 tsp mustard
  • 1/2 cup vegan mayo

Preparation

  1. Dice 3 potatoes.

  2. Boil the diced potatoes until tender.

  3. Drain the potatoes.

  4. Add the drained potatoes to a bowl with chickpeas, pickles, celery, dill, salt, pepper, mustard, and vegan mayo.

  5. Mix well.

  6. Serve.
