Vegan Sheet Pan Nachos

Ingredients

  • black beans & seasoned with chili powder
  • smoked paprika
  • cumin & garlic powder
  • chips & peppers
  • vegan cheese
  • avocado slices

Preparation

  1. Preheat oven to 360°F & thinly slice bell pepper. lay out on a baking tray lined with a silicone mat (or parchment) & bake 5 mins

  2. Meanwhile, cut a pack of tortillas into chip shapes (I used the thiccc corn tortillas from TJs, came in a pack of 8). spread out on the tray evenly, sprinkle with salt, then bake with the peppers for 15 mins

  3. While baking, prepare your bean/meat toppings. I mixed the “beef” with 1 can rinsed black beans & seasoned with chili powder, smoked paprika, cumin & garlic powder

  4. After 15, flip the chips & peppers to bake on the other side for 10 mins

  5. Then sprinkle an even layer of the beef + black beans on the tray, then stick in the oven for another 10 mins

  6. Sprinkle vegan cheese all over & stick into the oven for another 5 mins to melt

  7. Top with fresh avocado slices, chopped herbs (would’ve preferred cilantro tbh), squeeze of lime, salsa & hot sauce
