Vegan Stuffed Mushroom Caps


  • 1 avocado, peel and pit removed
  • 1/4 cup diced purple onion
  • 1 tomato, diced
  • 1 lemon, juiced
  • 2 cloves garlic
  • Optional: pinch of cayenne, sea salt, or ground black pepper
  • Optional: tamari


  1. Pour a little tamari inside each mushroom cap

  2. Mash the avocado in bowl and add the onion, tomato, lemon juice, garlic, and optional spices

  3. Spoon the avocado mixture inside mushroom caps and enjoy
