Vegan Stuffed Mushroom Caps
Ingredients
- 1 avocado, peel and pit removed
- 1/4 cup diced purple onion
- 1 tomato, diced
- 1 lemon, juiced
- 2 cloves garlic
- Optional: pinch of cayenne, sea salt, or ground black pepper
- Optional: tamari
Preparation
Pour a little tamari inside each mushroom cap
Mash the avocado in bowl and add the onion, tomato, lemon juice, garlic, and optional spices
Spoon the avocado mixture inside mushroom caps and enjoy
