Vegan Zucchini, Tomato & Serrano Pepper Pizza with Guacamole

Ingredients

For the pizza dough

  • 2 cups lukewarm water
  • 1.5 tbsp active dry yeast
  • 2 tbsp olive oil
  • 5.25 cups all-purpose flour or bread flour
  • 1.5 tsp salt
  • Pinch of sugar

For the toppings

  • 5 zucchini, roughly chopped
  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 2 serrano peppers, minced
  • Olive oil
  • Salt and pepper to taste

For the guacamole

  • 5 avocados
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup sliced cherry tomatoes
  • 1 tbsp minced ginger
  • Juice of 2 lemons
  • 1 bunch chopped cilantro
  • Salt and pepper to taste

Toppings

  • One bunch of cilantro
  • 1/2 cup sliced cherry tomatoes

Preparation

  1. In a bowl, add warm water, yeast, and sugar. Stir to combine and let it sit for 5 minutes.

  2. In another bowl, add olive oil, flour, and salt. Pour in the yeast mixture and mix with a fork until fully incorporated.

  3. On a lightly floured surface, remove the dough from the bowl and knead until smooth and elastic. Place it in a lightly oiled bowl, cover with plastic wrap and a kitchen towel, and let it rise for 1-2 hours or until doubled in size.

  4. Preheat the oven to 450°F (230°C).

  5. Place the chopped zucchini in a large bowl lined with paper towels and sprinkle with a pinch of salt to absorb the moisture.

  6. In a large deep pan or Dutch oven, heat the serrano peppers and garlic over medium heat for 1 minute. Remove from heat and place on a paper towel.

  7. Add the zucchini to the pan and cook over medium-high heat until softened (about 15 minutes). Then add in the cherry tomatoes and cook for an additional 5 minutes.

  8. Add back the garlic and serrano peppers. Use a potato masher to mash all the ingredients together until soft and similar to a chunky paste.

  9. Roll out the pizza dough into a pizza shape and spread the zucchini and tomato mixture from the pan over the dough. Season with salt and pepper.

  10. Bake in the oven for 15-20 minutes or until the crust is golden brown.

  11. Meanwhile, prepare the guacamole by mashing the avocados, lemon juice, ginger, salt, and pepper in a bowl until smooth. Add in the diced onion, minced garlic, sliced cherry tomatoes, and chopped cilantro. Mix until incorporated.

  12. Once the pizza is ready, top it with guacamole, fresh cilantro, and sliced cherry tomatoes.
