Vegetable Lo Mein
Ingredients
- 1/4 cup water
- 2 tbsp neutral, high heat oil, divided
- 1 bunch broccolini, washed & trimmed
- 1/2 red pepper, washed & sliced into bite-sized pieces
- 1 small zucchini, washed & spiralized
- 1 yellow squash, washed & spiralized
- 1 carrot, washed & spiralized
- 1/4 cup tamari
- 1 tbsp maple syrup
- 1 tbsp toasted sesame oil
- green scallions, sliced for garnishment?
Preparation
Cook Ramen Noodles al dente according to package directions
Rinse with cold water
Combine the soy sauce, maple syrup & toasted sesame oil in a small bowl
Add the shiitake mushrooms & water to your wok (or a large, deep-sided skillet)
Simmer until the water has cooked off
Add 1 tbsp of neutral oil & sauté the shiitakes until browned
Add the broccolini & red pepper
Sauté until the broccolini is bright green
Remove from the wok
Add the noodles to the wok
Add 1 tbsp of the oil & toss until the noodles start to brown
Add the spiralized vegetables
Toss for less than 1 minute
Add the other cooked vegetables & toss in the sauce
Stir fry until hot
Serve immediate
