Vegetable Lo Mein

Ingredients

  • 1/4 cup water
  • 2 tbsp neutral, high heat oil, divided
  • 1 bunch broccolini, washed & trimmed
  • 1/2 red pepper, washed & sliced into bite-sized pieces
  • 1 small zucchini, washed & spiralized
  • 1 yellow squash, washed & spiralized
  • 1 carrot, washed & spiralized
  • 1/4 cup tamari
  • 1 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • green scallions, sliced for garnishment?

Preparation

  1. Cook Ramen Noodles al dente according to package directions

  2. Rinse with cold water

  3. Combine the soy sauce, maple syrup & toasted sesame oil in a small bowl

  4. Add the shiitake mushrooms & water to your wok (or a large, deep-sided skillet)

  5. Simmer until the water has cooked off

  6. Add 1 tbsp of neutral oil & sauté the shiitakes until browned

  7. Add the broccolini & red pepper

  8. Sauté until the broccolini is bright green

  9. Remove from the wok

  10. Add the noodles to the wok

  11. Add 1 tbsp of the oil & toss until the noodles start to brown

  12. Add the spiralized vegetables

  13. Toss for less than 1 minute

  14. Add the other cooked vegetables & toss in the sauce

  15. Stir fry until hot

  16. Serve immediate
