Vegetable Mango

Ingredients

  • 1 tbs of coconut oil @thecoconutco
  • 2 tbs of grated ginger
  • 2 cups of tiger nut milk @thetigernutcompany (or other milk/plant milk)
  • 1 tsp of pepper
  • 1 tsp of fresh or granulated garlic
  • 2 tsp of turmeric powder
  • i cooked all of this together for about 10 minutes and then puréed it before adding:
  • then i added:
  • 1/4 cup of @naturescharm_uk coconut milk
  • 1 cup of water
  • 1 tbs of @misotasty white miso paste
  • 1 chopped red pepper @perrycourt.farm from @brookgreen_mk
  • 1/2 cup of cubed mango (this sweetened the curry naturally)

Preparation

  1. I cooked everything together just for about 10 minutes and served it with a mixture of cooked quinoa, buckwheat and basmati rice

  2. I love to cook a mixture of seeds and grains snd sometimes pulses together. It just offers a variety of textures and nutrients
