Vegetable Mango
Ingredients
- 1 tbs of coconut oil @thecoconutco
- 2 tbs of grated ginger
- 2 cups of tiger nut milk @thetigernutcompany (or other milk/plant milk)
- 1 tsp of pepper
- 1 tsp of fresh or granulated garlic
- 2 tsp of turmeric powder
- i cooked all of this together for about 10 minutes and then puréed it before adding:
- then i added:
- 1/4 cup of @naturescharm_uk coconut milk
- 1 cup of water
- 1 tbs of @misotasty white miso paste
- 1 chopped red pepper @perrycourt.farm from @brookgreen_mk
- 1/2 cup of cubed mango (this sweetened the curry naturally)
Preparation
I cooked everything together just for about 10 minutes and served it with a mixture of cooked quinoa, buckwheat and basmati rice
I love to cook a mixture of seeds and grains snd sometimes pulses together. It just offers a variety of textures and nutrients
