Veggi soup
Ingredients
- Mexican quinoa
- beans
- red onion
- peppers
- mushrooms
- 100g (washed) quinoa
- can of chickpeas
- can of chopped tomatoes
- sweetcorn
Preparation
I cooked off red onion, peppers and mushrooms then once done I added 100g (washed) quinoa, a can of chickpeas, a can of chopped tomatoes and some sweetcorn to the pan
I then added a squeeze of tomato purée, a stock cube, smoked paprika, cumin, chilli and nooch then put a lid on until the quinoa was done
Super simple, makes 4 portions, freezes well and cheap to make
