Veggi soup

Ingredients

  • Mexican quinoa
  • beans
  • red onion
  • peppers
  • mushrooms
  • 100g (washed) quinoa
  • can of chickpeas
  • can of chopped tomatoes
  • sweetcorn

Preparation

  1. I cooked off red onion, peppers and mushrooms then once done I added 100g (washed) quinoa, a can of chickpeas, a can of chopped tomatoes and some sweetcorn to the pan

  2. I then added a squeeze of tomato purée, a stock cube, smoked paprika, cumin, chilli and nooch then put a lid on until the quinoa was done

  3. Super simple, makes 4 portions, freezes well and cheap to make
