Veggie Burritos

Ingredients

  • 1 x 400g tin black beans
  • 2️⃣ 1 x onion (I used frozen chopped onion)
  • 3️⃣ 1 tsp each cumin and smoked paprika
  • 5️⃣ 1-2 crushed garlic cloves (I used frozen chopped garlic)
  • 6️⃣ 1 Tbsp olive oil
  • Fry the onion, garlic and spices in the olive oil
  • 2️⃣ Add the drained black beans and warm through
  • 3️⃣ Warm each tortilla wrap in the microwave for 10-20 seconds
  • 4️⃣ Spoon the black beans, rice, sweet corn and salsa onto the wrap and top with grated cheese and avocado
  • TOP TIPS
  • - You can cut these into strips for little ones or serve it as a deconstructed burrito ? - Leave out the cheese or use vegan cheese to make the recipe vegan

  1. X tortilla wraps ? ? Handful grated cheese ? ? 1 x avocado, mashed ? ? 1 cup cooked brown rice ? ? 1 small tin sweet corn ? ? 2 Chopped tomatoes ? ? 1 small onion, chopped ? (You can use a bottle of salsa if you don’t have fresh tomatoes) ? Fresh coriander (optional)
