Vibrant Pink Pancakes with Beetroot and Coconut Milk
Ingredients
- 200ml coconut milk
- some lemon juice
- pinch of salt
- 1/2 tsp baking powder
- 5g chia seeds
- 1 cooked beetroot
- 60g spelt
- 30g vegan protein
- 1/2 tsp olive oil
Preparation
In a mixer, add 200ml coconut milk, some lemon juice, pinch of salt, 1/2 tsp baking powder, 5g chia seeds, and 1 cooked beetroot.
Transfer the mixture into a bowl and add 60g spelt and 30g vegan protein, then mix well with a fork.
In a pan, add 1/2 tsp olive oil and transfer the mixture into pancake shape.
Add your favorite toppings and enjoy.
