Vibrant Pink Pancakes with Beetroot and Coconut Milk

Ingredients

  • 200ml coconut milk
  • some lemon juice
  • pinch of salt
  • 1/2 tsp baking powder
  • 5g chia seeds
  • 1 cooked beetroot
  • 60g spelt
  • 30g vegan protein
  • 1/2 tsp olive oil

Preparation

  1. In a mixer, add 200ml coconut milk, some lemon juice, pinch of salt, 1/2 tsp baking powder, 5g chia seeds, and 1 cooked beetroot.

  2. Transfer the mixture into a bowl and add 60g spelt and 30g vegan protein, then mix well with a fork.

  3. In a pan, add 1/2 tsp olive oil and transfer the mixture into pancake shape.

  4. Add your favorite toppings and enjoy.
