Vitamin Blast Winter Salad (Ginger, Citrus, Black Sesame Carrots W/ Edamame and Avocado Recipe)

Ingredients

  • 5-6 carrots, peeled & cut into matchsticks
  • 1 cup frozen shelled edamame, thawed
  • 1/4 cup black sesame seeds
  • big handful of cilantro leaves, roughly chopped
  • salt & pepper
  • 1/2 ripe avocado, peeled & chopped
  • 1/4 cup fresh orange juice
  • juice of 1 lime
  • salt & pepper
  • 1 soaked date (pitted)
  • 1 inch piece of ginger, peeled and grated finely
  • 1/2 avocado

Preparation

  1. Combine the carrot matchsticks, thawed edamame, sesame seeds and chopped cilantro in a large bowl

  2. Season the whole mixture with salt + pepper and toss lightly with your hands

  3. Set aside

  4. Combine the dressing: orange juice, lime juice, salt + pepper, soaked date, ginger and avocado – blend to your ideal consistency

  5. Pour the dressing over the carrot & edamame mixture

  6. Toss to combine

  7. Top with the chopped avocado pieces

  8. Garnish the dish with more sesame seeds and cilantro if you like
