Walnut Meat

Ingredients

  • 2 cups walnuts
  • 1 small onion, diced
  • 1- 4.5 oz green chiles
  • 1- 14.5 oz fire roasted sweet & smoky diced tomatoes
  • 1/4 tsp black pepper
  • 3/4 tsp salt
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano

Preparation

  1. Soak walnuts in a bowl, covered with water for at least 30 minutes

  2. Put them into a food processor and pulse until you have meat like consistency

  3. Dice onion and add avocado oil to a skillet

  4. Sauté onions until translucent (about 2-3 minutes)

  5. Add walnuts, seasonings, green chiles, and diced tomatoes

  6. Stir to combine and cook for 10 minutes on medium heat

  7. Serve on a tortilla with your favorite taco toppings
