Whipped Tofu Ricotta with Stewed Fruit
Ingredients
- 100 grams drained firm tofu
- 2 tablespoons soy or coconut milk
- 1 teaspoon liquid sweetener
- lemon zest
- vanilla extract
- fruit for stewing
- sprigs of thyme
- fresh fruit
- olive oil for drizzling
- pinch of sea salt
- seeds or granola (optional)
Preparation
Pulse the drained firm tofu with soy or coconut milk, liquid sweetener, lemon zest, and vanilla extract in a food processor until creamy.
Spread the whipped mixture on a plate.
Stew the fruit in a pan with sprigs of thyme, lemon zest, and vanilla for a few minutes.
Add fresh fruit to the plate.
Drizzle with olive oil, sprinkle with a pinch of sea salt, and add seeds or granola as desired.
