White Bean and Butternut Squash Stew
Ingredients
- Organic Cannellini Beans
- Organic Butternut Squash
- Organic Onion
- Organic Garlic
- Organic Broccolini
- Organic Broccoli Leaf
- Fresh Organic Sage
- Cumin
- 1 tsp Concentrated Vegetable Broth
- Salt and Pepper
Preparation
Chop the onion, garlic, butternut squash, broccolini, and broccoli leaf into bite-sized pieces.
In a large pot, sauté the chopped onion and garlic over medium heat until softened and fragrant.
Add the cannellini beans, butternut squash, broccolini, broccoli leaf, sage, cumin, and 1 tsp of concentrated vegetable broth dissolved in water to make about 2 cups of broth.
Season with salt and pepper to taste.
Bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes or until the vegetables are tender.
