White Chocolate Chai Pumpkin Loaf
Ingredients
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cardamom (optional but helps with authentic chai flavor)
- 1/4 teaspoon finely ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup buckwheat flour
- 1 cup all-purpose flour (sub king arthur gf all-purpose flour)
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 3 ounces prunes/dried plums (3/4 cup)
- 1/2 cup coconut sugar (sub light brown sugar)
- 1/2 cup monkfruit sweetener (sub white sugar)
- 1 15 ounce can pumpkin puree
- 2 teaspoons vanilla extract
- 2 large eggs, room temperature
- 1/2 cup plus 2 tablespoons white chocolate chips
Preparation
Preheat oven to 350 degrees f and line a 9x5 loaf tin with nonstick parchment paper
In a large mixing bowl, whisk together all spices (incl salt)
Whisk in buckwheat flour, all-purpose flour, baking powder and baking soda
In a high-powered blender, combine prunes and 1/2 cup lukewarm water
Blend until mostly incorporated
You may need to stop and scrape down the sides
Add coconut sugar, monkfruit, pumpkin, vanilla and eggs
Blend just until smooth and creamy
Pour wet ingredients into dry and fold until just combined
Fold in 1/2 cup white chocolate chips
Pour batter into loaf tin and gently shake to even out
Sprinkle remaining 2 tbsp chocolate chips on
Bake 55 mins; then cool 10 before taking out of tin
Cool another hour before slicing!
