Baked Rice Pudding with Fruits
Ingredients
- 1/2 cup short-grain rice
- 4 cups milk
- 1 cinnamon stick
- 1 lemon or orange peel
- 2 teaspoons butter
- 1/4 cup sugar
- 1/4 cup raisins
- 3 apricots, quartered
- 3 figs, quartered
- 3 peaches, quartered
Preparation
In a deep stainless steel pot, place the rice, cover with water, boil until the grain opens slightly, then drain and set aside.
Preheat the oven to 160°C and prepare a medium-sized baking dish.
In a thick-bottomed pot, place milk, cinnamon stick, and lemon or orange peel, bring to a boil for 5 minutes.
Remove the cinnamon stick and peel, add butter and sugar, stir until sugar dissolves, then add the cooked rice, raisins, apricots, figs, and peaches, and transfer the mixture to the baking dish.
Bake in the oven for 30-35 minutes until the milk thickens slightly and the surface browns, then serve warm or cold.
