Quick and Easy Raisin Cake

Ingredients

  • 1 cup raisins
  • 2 cups water
  • 1/2 cup butter, cut into pieces
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup chopped walnuts
  • 3/4 cup flour

Preparation

  1. Place the oven rack in the middle and preheat the oven to 180°C

  2. Prepare a 9-inch square pan by greasing it with shortening and flouring it

  3. In a deep pot, add raisins and water, cook on medium heat for 10 minutes, then remove from heat, add butter, and let the mixture cool for 10 minutes

  4. Add baking soda, salt, sugar, cinnamon, ginger, walnuts, and flour, then mix with a wide plastic spoon until the batter is homogeneous

  5. Pour the batter into the prepared pan

  6. Bake the cake for 35 minutes, then test for doneness with a toothpick; it should come out clean

  7. Remove the cake from the oven, place the pan on a wire rack, let it cool for a few minutes, then remove the cake from the pan and cool completely before serving
