Easy Raisin Cake
Ingredients
- 1 cup raisins
- 2 cups water
- 1/2 cup butter
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1 cup walnuts
- 3/4 to 1 cup flour
Preparation
Set the oven rack in the middle and preheat the oven to 180°C.
Prepare a 9-inch square pan by greasing it with shortening and flouring it.
In a deep pot, place the raisins and water, cook on medium heat for 10 minutes, remove from heat, add the butter, and let the mixture cool for 10 minutes.
Add the baking soda, salt, sugar, cinnamon, ground ginger, walnuts, and flour, then mix with a wide plastic spoon until a homogeneous cake batter forms.
Pour the batter into the prepared pan.
Bake the raisin cake for 35 minutes, test for doneness with a small wooden stick; it should come out clean when inserted into the center.
Remove the cake from the oven, place the pan on a wire rack, let it cool for a few minutes, then remove the cake from the pan and place it on the rack to cool completely before serving.
