Baked Stuffed Chicken Thighs
Ingredients
- 4 chicken thigh pieces
Stuffing
- 1 large carrot, chopped
- 1 small onion, chopped
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped black olives
- 1/4 cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon mixed spices or curry
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground ginger
- 1/4 cup olive oil
Preparation
Preheat the oven to 200°C and prepare a medium-sized baking dish.
In a deep bowl, place the carrot, onion, cheese, olives, breadcrumbs, salt, spices, pepper, and ginger and mix well.
Wash the chicken thigh pieces, place one in front of you, insert fingers between the skin and meat to create a space for stuffing, then add a quarter of the stuffing mixture to each thigh and secure the skin with a toothpick to prevent leaking during cooking.
Place the chicken pieces in the baking dish, drizzle with olive oil, and cover with aluminum foil.
Bake in the oven for 30 to 35 minutes until cooked, then remove the foil to brown the chicken and make it golden. Serve hot.
