Crunchy Cardamom Cake
Ingredients
- 3 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 cups sugar
- 1 tablespoon ground cardamom
- 1/2 teaspoon ginger powder
- 3/4 cup chilled butter, cubed
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
For decoration
- powdered sugar
Preparation
Heat the oven to 180°C, prepare a 9-inch square pan, line with parchment paper and grease the paper
Sift the flour, baking powder and salt, then add sugar, cardamom and ginger
Place the flour mixture in a food processor and run for a few seconds to mix
Add butter and pulse until it resembles breadcrumbs
Remove one cup of the crumb mixture and set aside
To the food processor, add milk, eggs, vanilla and sour cream, then blend until mixed
Pour the mixture into the prepared pan
Sprinkle the reserved crumbs on top of the cake
Bake for 40 minutes
Let it cool completely before cutting
Sprinkle with powdered sugar
