Spiced Chicken and Basmati Rice
Ingredients
- 2 cups basmati rice
- 2 medium chicken fillets
- 3 tablespoons vegetable oil
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1 large chopped onion
- 4 cloves chopped garlic
- 1 large grated carrot
- 1 green chili pepper
- 3 cups boiling water
Preparation
Wash the rice and soak it for 15 minutes
Cut the chicken into 1-inch cubes
In a pot, heat the oil, add the chicken and stir until golden brown
Add the salt, pepper, paprika, cumin, basil, oregano, stir to absorb the spices, then remove the chicken
Add the onion, garlic, and green pepper, stir until wilted
Add the carrot and stir with the onion
Return the chicken and stir with the vegetables
Add the rice, stir for a few minutes to absorb with the other ingredients
Add the water, let it boil, then reduce the heat and leave it to cook
