British Toad in the Hole Dish

Ingredients

  • 200 ml milk
  • 80 g 00 flour
  • salt
  • white pepper
  • 2.5 eggs (2 whole eggs and 1 egg white)
  • @this.uk sausages (part-cooked)
  • vegetables (assorted, such as roast potatoes, turnips, carrots, and Brussels sprouts)

Preparation

  1. Partially cook the sausages by browning them for a few seconds

  2. Preheat the oven to 220°C and heat oil in a tin until very smoky

  3. Prepare the batter by mixing milk, flour, salt, white pepper, and eggs

  4. Add the batter and sausages to the hot oiled tin

  5. Bake for 15 to 17 minutes until risen and golden

  6. Prepare and cook the usual vegetables such as roast potatoes, turnips, carrots, and Brussels sprouts as sides

Tips

  1. Use the extra egg yolk to make custard or cake if desired

  2. Ensure the oil is hot and smoky before adding batter and sausages to achieve proper rise

  3. Avoid overcooking sausages to prevent them from becoming too dark or stiff
