Ultimate Roast Chicken with Homemade Stuffing
Ingredients
- Whole chicken
- Onions
- Garlic
- Butter
- Herbs
- Egg (optional)
- Carrots
- Parsnips
Preparation
Preheat the oven to 400°F
Sauté onions and garlic in butter along with herbs
Mix in the egg if using, then stuff the mixture into the chicken cavity
Place the stuffed chicken in a roasting tray and add carrots and parsnips around it
Roast in the oven until the chicken is cooked through and vegetables are tender, typically 1.5 to 2 hours depending on size
Tips
Leave out the egg if you have an egg allergy
Baking the carrots and parsnips in the same tray as the chicken reduces washing up
