Ultimate Roast Chicken with Homemade Stuffing

Ingredients

  • Whole chicken
  • Onions
  • Garlic
  • Butter
  • Herbs
  • Egg (optional)
  • Carrots
  • Parsnips

Preparation

  1. Preheat the oven to 400°F

  2. Sauté onions and garlic in butter along with herbs

  3. Mix in the egg if using, then stuff the mixture into the chicken cavity

  4. Place the stuffed chicken in a roasting tray and add carrots and parsnips around it

  5. Roast in the oven until the chicken is cooked through and vegetables are tender, typically 1.5 to 2 hours depending on size

Tips

  1. Leave out the egg if you have an egg allergy

  2. Baking the carrots and parsnips in the same tray as the chicken reduces washing up
