Vegan Gluten-Free London Fog Cookies

Ingredients

  • 1 cup vegan butter
  • 2 1/3 cup GF flour
  • 1 cup icing sugar
  • Salt
  • 1/2 tsp vanilla
  • 1/4 teaspoon xanthan gum
  • 1 pouch of earl grey tea
  • 1 cup vegan white chocolate chips
  • 1 tbsp coconut oil

Preparation

  1. Cream butter in an electric or stand mixer and add vanilla, combining quickly.

  2. Add flour, icing sugar, xanthan gum, tea bag, and salt; mix together, scraping down sides as needed.

  3. The dough should be crumbly, but form together with hands to shape a ball; if too wet, add more flour one tablespoon at a time.

  4. Roll dough onto a flat surface between two pieces of parchment paper.

  5. Roll into a flat sheet and use cookie cutters to shape cookies.

  6. Place on a cookie sheet and bake at 350 degrees for 6-10 minutes until edges turn golden.

  7. Remove and allow to cool for 30 minutes.

  8. Melt the white chocolate chips with coconut oil.

  9. Dip in the melted white chocolate and cool until chocolate sets; sprinkle with dried lavender if desired.
