Chinese Garlic Green Bean Stir-Fry

Ingredients

  • 250g green beans
  • 1-2 tbsp preserved vegetable (substitute with mushrooms or tofu)
  • 5 cloves garlic, minced
  • 3-4 dried chillies
  • 1 tbsp sesame oil
  • 1/2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 3 tbsp cooking oil

Preparation

  1. Snap off the ends of the green beans, pat dry and set aside.

  2. Heat 2 tbsp oil over medium heat, fry the green beans until they get a brown char mark.

  3. Remove the green beans from the heat and set aside.

  4. In the same wok, add 1 tbsp oil, sauté the garlic, then add the preserved vegetable and dried chillies, and cook for about 1 minute.

  5. Add the green beans back to the wok and cook for another minute.

  6. Turn off the heat and transfer the green beans to a serving plate.

  7. Serve the green beans with rice.

Tips

  1. Spread out the green beans on a kitchen towel to dry thoroughly and avoid violent oil splatter.
