Chinese Garlic Green Bean Stir-Fry
Ingredients
- 250g green beans
- 1-2 tbsp preserved vegetable (substitute with mushrooms or tofu)
- 5 cloves garlic, minced
- 3-4 dried chillies
- 1 tbsp sesame oil
- 1/2 tbsp brown sugar
- 1 tbsp soy sauce
- 3 tbsp cooking oil
Preparation
Snap off the ends of the green beans, pat dry and set aside.
Heat 2 tbsp oil over medium heat, fry the green beans until they get a brown char mark.
Remove the green beans from the heat and set aside.
In the same wok, add 1 tbsp oil, sauté the garlic, then add the preserved vegetable and dried chillies, and cook for about 1 minute.
Add the green beans back to the wok and cook for another minute.
Turn off the heat and transfer the green beans to a serving plate.
Serve the green beans with rice.
Tips
Spread out the green beans on a kitchen towel to dry thoroughly and avoid violent oil splatter.
