Easy Weeknight Scallion Oil Noodles

Ingredients

  • 3 large scallions
  • 1/3 cup neutral oil
  • 1 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp vegetarian oyster sauce (optional)
  • 1 tbsp brown sugar (or sweetener of your choice)
  • Wheat noodles, cooked, for serving

Preparation

  1. Cook the wheat noodles according to the package instructions. Drain and set aside.

  2. In a small saucepan, heat the neutral oil over medium heat. Add the chopped scallions and cook for about 2-3 minutes, stirring frequently, until the scallions become fragrant and slightly softened. Be careful not to let them burn.

  3. Remove the saucepan from the heat. Stir in the dark soy sauce, light soy sauce, vegetarian oyster sauce (if using), and brown sugar until well combined.

  4. In a large mixing bowl, combine the boiled noodles with the scallion oil mixture. Toss until the noodles are evenly coated in the sauce.

  5. Divide the noodles into bowls and enjoy warm or at room temperature.
