Balinese Betutu Chicken Stew
Ingredients
- 1 whole free-range chicken, uncut
- Water as needed
Ground spices
- 1 tablespoon coriander
- 4 candlenuts
- 1 thumb-sized piece of turmeric
- 15 bird's eye chilies
- 1 tablespoon shrimp paste
- 2 teaspoons black pepper
- Salt to taste
- Sugar to taste
Chopped spices
- 250 grams shallots
- 9 cloves garlic
- 3 thumb-sized pieces of galangal
- 5 thumb-sized pieces of kencur
- 1 thumb-sized piece of turmeric
- 3 thumb-sized pieces of ginger
- 20 bird's eye chilies
- 5 stalks lemongrass
Preparation
Sauté the ground spices and chopped spices until fragrant and cooked.
Add the cleaned chicken and stir well. Add salt and a little sugar.
Add water to cover the chicken. Simmer on low heat until the chicken is very tender and the spices are fully absorbed. Taste, then remove from heat and serve.
Tips
Do not let the sauce dry out; it is better with some sauce remaining.
