Indonesian Sweet Martabak Pancake
Ingredients
- 200g flour
- 200g boiled water
- 1 egg
- 40g sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
Additional
- Sugar as needed
- Margarine or butter as needed
- Sweetened condensed milk
- Toppings as desired
Preparation
Heat a non-stick pan over very low heat until water sprinkled on it beads up like crystals; use a 20 cm diameter pan and line with zinc if the pan is thin.
Mix flour, boiled water, salt, and sugar until smooth; add egg and mix until no lumps remain, then let batter rest for 15-30 minutes covered with a cloth before adding baking soda and mixing well.
Pour batter into the pan; when holes form at the edges, sprinkle with sugar, cover, and cook until the top is fully set with very low heat, then remove, brush with margarine or butter, add sweetened condensed milk and desired toppings, cut into pieces, and serve.
Tips
For a sweeter batter, add more sugar during mixing.
Ensure the heat remains very low throughout cooking to prevent burning and achieve proper texture.
