Sambal with Sunny-Side-Up Eggs

Ingredients

  • 3 shallots
  • 1 onion
  • 5 garlic cloves
  • a handful of bird's eye chilies
  • 3 large chilies
  • a handful of anchovies
  • 1.5 cups water
  • 5 eggs
  • tamarind juice
  • salt, MSG or sugar

Preparation

  1. Blend all the starred ingredients with a little water, but do not blend for too long to avoid making it too smooth.

  2. Heat oil and sauté the blended mixture until the oil separates.

  3. Add water and let it simmer for a while.

  4. Add tamarind juice, salt, MSG or sugar.

  5. When the mixture boils well, reduce the heat.

  6. Add the eggs one by one by breaking each egg in a bowl, remove the center if necessary, and then add to the pan, repeating for all eggs.
