Chicken Liver Omelette with Mango Sauce
Ingredients
- 3-4 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Filling
- 2 cloves garlic
- 1 pair chicken liver and gizzard
- 3 cabbage leaves
- 1 small carrot
- 1 stalk green onion
- 4 shallots
- 1/2 tablespoon all-purpose flour
- 1 teaspoon tapioca starch or sago starch
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon sugar
- 1/4 teaspoon powdered stock
Sauce
- 1/2 onion
- 1/2 mango (1/4 blended, 1/4 coarsely chopped)
- 3 tablespoons tomato sauce
- 1 teaspoon sugar
- salt to taste
- pepper to taste
- water as needed
Preparation
Beat the eggs with salt and pepper and set aside.
Make the filling by sautéing the garlic and shallots until fragrant, add chicken liver and gizzard and stir until color changes, then add carrot, cabbage, and green onion and stir until half wilted, season with salt, pepper, sugar, and stock powder, stir evenly and set aside.
Pour the filling into the egg mixture, add flour and starch, mix well, then pour into hot oil over medium heat and cook until done.
Sauce
Heat oil and sauté garlic until fragrant.
Add mango and blended mango and stir until wilted.
Add tomato sauce, salt, pepper, sugar, and a little water, adjust thickness to taste, cook until bubbling and taste test.
Serving
Serve the omelette with the sauce.
