Fried Noodles with Spicy Chicken
Ingredients
Fried noodles
- 2 packs of noodles
- 3 tablespoons sweet soy sauce
- Salt to taste
Noodle spice paste
- 1 clove garlic
- 3 shallots
- 2 candlenuts
Spicy chicken
- 250 grams ground chicken
- 4 sliced shallots
- 2 chopped garlic cloves
- 2 candlenuts
- 7 curly red chilies
- 5 bird's eye chilies
- 1 bruised lemongrass stalk
- 2 torn kaffir lime leaves
- 1 finely chopped tomato
- 2 tablespoons sweet soy sauce
- Sugar to taste
- Salt to taste
- Pepper to taste
- 50 ml water
Preparation
Boil the noodles until cooked and set aside.
Grind the garlic, shallots, and candlenuts for the noodle spice paste until fine.
Sauté the noodle spice paste until fragrant.
Add the boiled noodles, salt, and sweet soy sauce to the pan; stir until well mixed and seasoned, then set aside.
Grind the curly red chilies, bird's eye chilies, and candlenuts for the chicken spice paste until fine.
Sauté the sliced shallots, chopped garlic, and ground spice paste until fragrant.
Add the ground chicken, kaffir lime leaves, tomato, sweet soy sauce, sugar, salt, pepper, and water; stir until the chicken is cooked and well mixed, then adjust seasoning.
Serve the spicy chicken together with the fried noodles.
