Shredded Chicken Lemongrass Sambal

Ingredients

  • 500 g chicken breast

Sliced spices

  • 8 stalks lemongrass
  • 3 kaffir lime leaves
  • 10 shallots
  • 3 garlic cloves
  • 10 curly red chilies
  • 20 red bird's eye chilies
  • 15 green bird's eye chilies

Seasonings

  • 1 teaspoon shrimp paste
  • stock powder to taste
  • salt to taste

Preparation

  1. Boil the chicken breast until cooked, then remove, fry briefly, and shred.

  2. Fry the shrimp paste, shallots, and garlic, then add the kaffir lime leaves and sauté until fragrant and oily.

  3. Add the sliced lemongrass and chilies, stir well, and cook briefly.

  4. Finally, add the shredded chicken, salt, and stock powder, stir well, cook briefly, check the taste, and turn off the stove.
