Crispy Cheesy Cauliflower Gnocchi with Broccoli

Ingredients

  • 1 bag cauliflower gnocchi
  • 4 ish tablespoons nutritional yeast
  • 2-3 slices plant-based cheddar
  • 2 cups broccoli
  • Olive oil spray
  • Sea salt

Preparation

  1. Put the gnocchi in a pan straight from the freezer on low to medium heat with the lid on.

  2. Once the gnocchi have thawed slightly, add olive oil and nutritional yeast, and stir.

  3. Replace the lid and increase the heat to medium.

  4. Check every 2 minutes, adding more olive oil and nutritional yeast until the gnocchi are crispy on the outside.

  5. Once done, break up the cheddar slices and place them evenly on top of the gnocchi, replace the lid, and lower the heat.

  6. Once the cheese has melted, stir and serve with sautéed broccoli.

  7. To prepare the broccoli, sauté it in olive oil and top with sea salt.
