Vegan Mediterranean Meatball Spaghetti

Ingredients

  • Red onion
  • Garlic
  • Mixed olives
  • Sun-dried tomatoes
  • Artichokes
  • Meatless meatballs
  • Whole wheat spaghetti
  • Sea salt
  • Black pepper
  • Chili flakes

Preparation

  1. Cook whole wheat spaghetti according to package directions, reserving some pasta water.

  2. In a skillet, sauté red onion and garlic until softened and fragrant.

  3. Add mixed olives, sun-dried tomatoes, artichokes, and meatless meatballs, cooking until heated through.

  4. Incorporate the marinade from the olives, which includes lemon and chili oil, along with a little oil from the sun-dried tomatoes and artichokes.

  5. Stir in some reserved pasta water, sea salt, black pepper, and chili flakes, then heat through and serve.

Notes

  1. This recipe uses natural liquids from the ingredients instead of a traditional tomato-based sauce for a lighter, Mediterranean-inspired flavor.
