Vegan Mediterranean Sausage Spaghetti
Ingredients
- sun-dried tomatoes
- red onion
- garlic
- grilled peppers
- olives
- fresh tomatoes
- sliced Italian sausage (Tofurky brand)
- chilli flakes
- black pepper
- wholegrain spaghetti
- seeded sourdough baguette
Preparation
Cook wholegrain spaghetti in boiling water according to package instructions until al dente.
In a skillet, sauté red onion and garlic over medium heat until fragrant and softened.
Add grilled peppers, olives, fresh tomatoes, and sliced Tofurky sausage to the skillet and cook until vegetables are tender and sausage is heated through.
Season the mixture with chilli flakes and black pepper to taste.
Stir in a little pasta water and oil from the sun-dried tomatoes to create a light sauce and combine everything.
Toss the cooked spaghetti with the sauce and vegetable mixture.
Serve immediately with a warm seeded sourdough baguette on the side.
