Miso Butter Roasted Cabbage
Ingredients
- 1 green cabbage
- 1 red cabbage
- 1-2 tablespoons oil
- Salt and pepper
- 3 tablespoons miso paste
- 2 tablespoons vegan butter
- 1 tablespoon rice vinegar
- 2 teaspoons black vinegar
- 1 tablespoon mirin
- White pepper to taste
- 2 green onions
- 1 tablespoon chives
Preparation
Cut the green and red cabbages into 6-8 wedges each.
Lay out the cabbage wedges onto a baking sheet and lightly brush with oil. Season with salt and pepper. Bake at 375°F for 15 minutes.
Melt the vegan butter, then mix with miso paste, rice vinegar, black vinegar, and mirin. Season with white pepper.
After the cabbage has cooked for 15 minutes, brush the miso butter mixture onto the cabbage and continue baking for another 8-12 minutes or until nicely browned.
Serve with chopped green onions and chives.
Notes
The cabbage will be nicely browned but still tender and juicy.
