Greek Yogurt Marinated Chicken with Lemon
Ingredients
- 1/3 cup Greek yogurt
- 3 boneless skinless chicken breasts (14 oz raw)
- 2 whole lemons, juiced and zested
- 1/2 tablespoon fresh minced garlic
- 1/2 tablespoon dried oregano
Preparation
Trim the chicken breasts of any extra fat and pat dry before adding to the marinade.
Mix the marinade ingredients together.
Immerse the chicken in a shallow bowl with the marinade or in a zippered freezer bag and let it marinate for at least 15 minutes or overnight.
Preheat the oven to 375°F.
Pour the marinated chicken into a baking dish and add thinly sliced lemons around it for extra flavor.
Roast for 45-55 minutes or until the chicken is cooked through with no pink inside.
Immediately cover the chicken with tin foil in the dish it was cooked in, seal tightly, and let it rest to ensure it is fully cooked and moist.
Tips
This marinade works well with skin-on or skinless chicken.
The yogurt tenderizes the chicken for a juicy bite.
Use dried oregano for its stronger flavor.
Let the chicken rest covered to keep it moist and ensure full cooking.
