Traditional Greek Coffee Preparation
Ingredients
- Finely ground coffee
- Water
- Granulated sugar (optional)
Preparation
Add water to a small pot or briki
Stir in the desired amount of finely ground coffee and sugar based on preference
Heat gently over low heat until foam begins to rise
Remove from heat to allow foam to settle, then heat again if needed for a second rise
Pour carefully into small cups and let the grounds settle before serving
Tips
Avoid over-boiling to preserve the thick foam known as kaimaki
Serve with paximadia cookies for dipping, as is traditional in Greek culture
