Easy Roasted Garlic Hummus
Ingredients
- 2 cans of organic chickpeas (drain one can and reserve water from the second can)
- 1/2 cup tahini
- Juice from one large lemon
- Some chickpea juice from the can (use half first, then add more if you want creamier consistency)
- 1 whole roasted garlic (peeled)
- 1-2 tsp salt
- 1 tsp cumin powder
- 1 tsp pepper
Preparation
Blend everything in a high speed blender until smooth and creamy.
Plate the hummus in a shallow bowl, decorate with chopped purple onions, cherry tomatoes, micro greens, lemon wedges, olives, and crushed red pepper.
Drizzle it with extra virgin olive oil and sprinkle with sesame seeds.
