Easy Roasted Garlic Hummus

Ingredients

  • 2 cans of organic chickpeas (drain one can and reserve water from the second can)
  • 1/2 cup tahini
  • Juice from one large lemon
  • Some chickpea juice from the can (use half first, then add more if you want creamier consistency)
  • 1 whole roasted garlic (peeled)
  • 1-2 tsp salt
  • 1 tsp cumin powder
  • 1 tsp pepper

Preparation

  1. Blend everything in a high speed blender until smooth and creamy.

  2. Plate the hummus in a shallow bowl, decorate with chopped purple onions, cherry tomatoes, micro greens, lemon wedges, olives, and crushed red pepper.

  3. Drizzle it with extra virgin olive oil and sprinkle with sesame seeds.
