Roasted Anchovy Toast with Tomato Cream

Ingredients

  • 12 anchovies
  • Slices of bread
  • 1 bunch parsley
  • 2 cloves garlic
  • Arugula
  • 1 tablespoon honey
  • 20 grams pine nuts
  • 150 grams cherry tomatoes
  • Salt
  • Pepper
  • Olive oil

Preparation

  1. Clean the anchovies, remove the spine, and reserve the fillets.

  2. Blend olive oil with garlic and parsley.

  3. Brush the fillets and bake at 170°C for 8 minutes.

  4. Sauté pine nuts with a few drops of oil, add cherry tomatoes, salt, pepper, and honey. Blend until a dense paste is obtained.

  5. Spread this paste on crunchy bread, top with the roasted anchovies and arugula.

  6. Serve as an appetizer or starter.
