Creamy Cheesy Dorito Chicken Casserole

Ingredients

  • 3 cups cooked and shredded chicken breast like from a rotisserie chicken
  • 15 ounce bag nacho cheese Dorito chips
  • 1 cup sour cream
  • 20 ounces (2 cans) condensed cream of chicken soup
  • 10 ounce Rotel (diced tomatoes with green chiles)
  • 15 ounce can corn drained (or 1.5 cups frozen/fresh)
  • 1 cup freshly grated cheddar cheese
  • 1 cup freshly grated Monterey Jack cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Garnish

  • fresh diced tomatoes
  • thinly sliced green onions

Preparation

  1. Preheat oven to 350 degrees. Grease a 9×13-inch baking dish with nonstick cooking spray.

  2. Crush chips and place half of them on the bottom of your casserole dish and set aside.

  3. In a large mixing bowl, combine sour cream, soup, Rotel, corn, cumin, chili powder and half of each of the cheeses. Fold in the shredded chicken until well combined.

  4. Spread the chicken mixture over the chips in the baking dish. Top with the remaining chips and cheese.

  5. Bake uncovered in the preheated oven for 25-30 minutes.

  6. Let rest for 5-10 minutes, top with optional garnish and serve.
