20 Minute One Pan Chicken Caprese Skillet

Ingredients

  • 3 chicken breasts
  • 1 tablespoon olive oil
  • 1/4 cup pesto
  • 6 slices fresh mozzarella, sliced
  • 2 vine ripe tomatoes, sliced

Toppings

  • balsamic glaze
  • fresh basil leaves

Preparation

  1. Preheat oven to 425°F

  2. Heat the skillet over medium heat

  3. Season both sides of chicken and add to skillet. Cook for 3 minutes per side until browned

  4. Add a spoonful of pesto over the top of each chicken breast. Then add the mozzarella slices and tomato slices. Add the skillet to the oven for 10-12 minutes, until chicken reaches an internal temperature of 165°F.

  5. Finally, top with fresh basil and balsamic glaze.
