Chicken Caprese Sheet Pan Dinner
Ingredients
Marinade
- 1/4 cup olive oil
- 1/2 cup Greek yogurt
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
Main
- 2 pounds chicken breasts, about 3 large breasts- cut in half
- 2 pints cherry tomatoes
- 2 tablespoons olive oil
- 8 ounces fresh mozzarella
- fresh basil
- 1/4 cup balsamic glaze
Preparation
In a bowl, whisk together Greek yogurt, olive oil, red wine vinegar, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Add chicken breasts and marinate for 15 minutes.
Preheat oven to 400°F.
Line a sheet pan with parchment paper, add the cherry tomatoes and drizzle with olive oil, salt, and pepper. Arrange tomatoes around the edge of the sheet pan and place chicken breasts in the center.
Bake chicken and tomatoes for 20 minutes, or until internal temperature of chicken is almost 165°F.
Remove from oven and top with mozzarella and a drizzle of balsamic glaze. Turn on oven broiler and broil chicken for 3-5 minutes, watching to make sure it doesn’t burn.
Remove and add some fresh basil on top.
