Garlicky Gingery Ground Beef
Ingredients
- 2 tablespoons neutral oil (such as avocado or vegetable)
- 2 tablespoons grated ginger (from a 2-inch piece)
- 2 tablespoons grated garlic (from 6 cloves)
- 1 pound ground beef, any kind
- 1 teaspoon kosher salt
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons agave, sugar, or maple syrup
- Cooked rice, for serving
Preparation
Set a wok or large heavy-bottomed skillet over high heat. Add the oil and when it starts to ripple, add the ginger and garlic. Stir continuously with a wooden spoon until they become deeply yellow, about 30 seconds.
Add the ground beef and salt. Flatten and crumble the meat into small pieces with a spoon. Cook, stirring frequently, until no longer pink, about 3 minutes.
Stir in the soy sauce and agave. Continue cooking until the beef darkens slightly, about 1 minute. Avoid cooking too long to prevent the liquid from evaporating; it should remain slightly wet and glossy.
Serve over cooked rice.
Tips
Optionally, top with chopped green onions and serve with sliced Persian cucumbers and carrots for added vegetables.
